Shop the Pantry Meal Plan

You have heard the term before, but have you ever done it???? Shop the pantry? Thats whats happening for me this week. It's inevitable that going grocery shopping for the week and coming home I end end up with a few extra things in the freezer and pantry that didn't get used. And those things add up over time. To make it more fun, there's the deep freezer in the basement that I for some reason keep no knowledge of what I have in it from week to week. 

Momma is busy and cant remember it all. So this week, you'll see my meal plan goes through breakfast saturday.... I have enough stock to get me through the most of the week. That makes me happy.

I used to have a huge problem with buying ranch, ketchup, bbq sauce and other condiments. Don't know why but I could never remember if we had any or if I needed it, so I just bought it. I had more than I knew what to do with when we moved and most of it had gone bad. My realization, being unorganized is expensive. My solution to that problem, is I only buy it if its on my list. (I know it took me awhile to catch onto that). If it isn't on the list then we don't need it and I stick to that. 
The moral of it all, shop the pantry first, plan your meals, make a list & stick to it. Other key step, if at all possible, shop without the kids and the hubby.

Busy Mom - Easy Meal Plan


Consistency. If there is any one thing to contribute my journey to, it would be consistency. It’s doing the little things that seem easy and tedious and like you don’t really need to do that makes the difference. Because all those little things add up. If you consistently don’t do them, well you can guess what your result is. But if you have faith in the process and consistently do the little things than the big changes will fall in line. Make time for the little things that you think don’t really matter. Because they truly are you success.

Clean Eating Roasted Cauliflower

Are you hungry right now? Is your mouth watering? If not it will be after this is in the over for about 20 minutes! This is so good and so simple. Some of the best veggie recipes I've found are the ones with the least ingredients. Its amazing how tasty they can be.
A friend told me about this recipe after I had been talking about a roasted cabbage recipe. Both are essentially the same. Olive oil, Salt, Pepper, oven. Happiness.

Ingredients:
1 head Cauliflower
2 TBS Olive Oil
Salt & Pepper

Preheat oven to 400 degrees. Slice the Cauliflower into steaks. Lay the steaks on a baking sheet, brush with olive oil then sprinkle with salt & pepper. Bake for 20 minutes then flip the steaks over and bake for 15-20 more.

I know seriously simple. Enjoy.

Crockpot Sausage, Onions & Peppers

Some things in life can be quite difficult.....this isn't one of those things. With all the hustle and bustle it's nice to throw 4 ingredients into the crockpot and have a delicious meal 4 hours later. No complaints from this momma. Awesome for a day when the family is in and out so everyone can just grab a bite and go. 

Try it and see what you think, all you need is four things; Italian Sausages, Onions, Peppers, Marinara. BOOM! For us we like a sweet sausage, so that's what I used but use what ever your family favorite is. I sliced up the onions and peppers the night before, just a quick cut. Add the sausages on top of them, and top it all off with your sauce. I eat mine on a plate by it's self but the rest of the family likes it on a hot dog bun. 

Ingredients:
6 Italian Sausage 
1 Onion 
1 Green Pepper
1 16oz. Jar Marinara

Directions:
Slice the onions and peppers into long pieces, place in crock pot. Add thawed sausages, top with marinara sauce. Cook on low for 4 hours.

Busy Mom Meal Plan - Week of 16 Jan.

I am beyond busy, as I know you are too. But do you ever feel like you get 10 times more accomplished when you have a million things to do? You just go down the checklist, getting things done and not wasting any time..... Where as if it's a day with just one thing to do, you procrastinate all day and before you know it, it's 10pm and you still haven't gotten what you were supposed to done. That is me to a T! 

I prefer to be running in high gear, wide open just getting it all done. And most weeks I am. I use my weekends to plan and prep for my week ahead and then once Monday hits, BOOM! It's on. Here's the meal plan for the week. Now onto the next item on my list!

Be BRAVE. Take CHANCES. MAKE IT HAPPEN.

Easy Busy Mom Meal Plan

Because Meal Planning doesn't always have to be fancy, sometimes convenience just wins. For this busy momma and the week ahead, it's winning. I'm keeping my meals and planning simple because I know I'll be running wild. 

You can make an amazing meal plan but if it doesn't fit you, keep you fueled and make you happy, than it really isn't useful cause you aren't likely to stick to it. I'm optimistic and try new recipes but only when they fit my schedule. Let's chat if you are having trouble finding your fit in meal planning. And don't think that just because I'm having grilled chicken, it's plain jane stuff. My chicken is DA BOMB! My rice and quinioa are tasty-tasty and veggies, really there are a million quick easy ways to make delicious veggies. Simple is good.

Red's Slow Cooker Chili


Because snow or any kind of cold weather means CROCKPOT DINNER! Duh! And I am all about the slow cooker, what busy momma isn’t? I am also a lover of CHILI! And you will be a lover of this recipe! I’ve been through a few different chili recipes before I found the PERFECT COMBO! You see, my sad truth is that I am even too busy (or impatient) to measure out a ton of different spices. It drives me bonkers and I just want to dump a bunch of stuff in there and go. DILEMMA. I needed a way to get all kinds of flavor without all kinds of spices and junk to add! 

That’s what this recipe is. Dump everything in and go! Here is it AMAZING CHILI, 10 ingredients including spices. 

What you need:
1 pound ground beef, turkey, or chicken
1 onion
1 green pepper
1 16 ounce jar Pace Picante Sauce
1 can tomato and green chilies
1 can corn, drained (optional)
1 can black beans, drained & rinsed
1 15 ounce can tomato sauce
½ tsp. cumin

What you do:
1. Dice up the onion and green pepper, brown in a pan with the pound for meat. Add salt & pepper as necessary. Once cooked, dump in crock pot. 
2. Add all other ingredients to crock pot, stir/combine. Cook on low for 3.5 hours

The salsa and tomato/green chilies is really where it’s at. That’s a ton of flavor and it makes the chili. If you like it spicy than get the medium salsa if you don’t want it quite so spicy go with the mild. You will love it either way. To make it even easier, you can cook the veggies and meat the night before and then just throw them in the slow cooker with everything else the next morning.
