Meal Planning Made Easy


I often get asked about how I eat the same things over and over and if I get bored with them. The truth, no. I could honestly eat chicken every day and be fine. I think that there are so many ways you can cook or season it and so many different things you can eat with it, that you don't really have to get bored. I am the type of person that will find something I love and eat it every meal every day. haha! Anyone else the same?

This week my jam is this grilled chicken on top a bed of broccoli slaw, then topped with salsa and sunflower seeds and almonds to top that! It sounds so good just typing it in! Believe me, It's delicious! It's the perfect crunch of flavors and is so filling! If you haven't tried it you need to. Plus it EASY! I'm busy and need easy lunches and meals. Oh, and how could I forget, my secret weapon for any and everything........ SALSA! I love salsas and pico. Quick easy flavor with way way less calories than a dressing or sauce. You do have to watch sugar in some, but it usually isn't any trouble. Any other salsa fans? Yum!


Then usually the rest of my meal plan proteins are played off of what I'm cooking for the family. I know we are having shrimp one night, so I'll eat those but instead of the carb loaded sides they enjoy, I'll eat veggies. I also know I have pork lion left overs and have some ground turkey in the fridge that I'm going to make something out of. From there I can run with what ever veggies I'm in the mood for.
