One Meal - Four Ingredients - YUMM!

Life is fast paced, life with a kiddo is super-duper fast paced. Seriously, quick and easy is necessary, especially when it comes to clean eating healthy meals. They have to be functional, tasty and quick quick quick. One of my FAVORITE go to meals has just FOUR INGREDIENTS is oh so delicious and filling! SCRAMBLED EGGS topped with SALSA! I know it sounds so easy, why didn’t we think of this before?

The key and most important part of making this is the sautéed onions. They are perfection. Here’s how I do it. I start by putting a tsp. or so of olive in the pan and get it warming. While its warming dice up your onions and crack your eggs into a bowl. I usually use 2 eggs but if I’m feeling really hungry I’ll use 3.

To test if the oil is warm, drop on piece of onion in it, you’ll want it to SIZZLE. If it does, then add the rest, if not wait a minute of two. The onions take the longest to cook. Toss them around so they all coat a bit with the oil. After a couple minutes they’ll begin to turn translucent and you’ll start to smell the goodness. It doesn’t end there though. Let them keep sizzling until the edges begin to crisp. They’ll turn golden brown and smell even better! That’s the magic happening!

Once the onions are all kinds of cooked and smelling good, add your eggs to the pan. YUMM! Eggs cook pretty quickly, you just want to scramble them around until they are cooked thoroughly.

 Easy as pie, plate up your onions & eggs, then top with your favorite salsa! You could even top with some shredded cheese if you are feeling extra spunky! I mix it up often trying different salsas and picos. It’s all in what one you like! Eggs are such an easy boat for any recipe or quick meal. Enjoy!
